Creamy Cucumber Salad

Ingredients:

4 large cucumbers
1 medium sweet onion
1 cup mayonnaise
1/2 cup white sugar
1/4 cup white vinegar
Salt and pepper to taste

Directions:

Slice the cucumbers thinly after washing and peeling them. You can use a mandoline slicer for uniform slices.
Thinly slice the sweet onion.
In a bowl (preferably ceramic, glass, or plastic with a lid), combine the sliced cucumbers and onions.
In a separate small bowl, mix together the mayonnaise, white sugar, and white vinegar until smooth.
Pour the mayonnaise mixture over the cucumber and onion mixture, and toss to combine well.
Season with salt and pepper to taste.
Cover the bowl with a lid and lightly shake to ensure everything is well coated.
Place the salad in the refrigerator and let it marinate for at least 6 hours, or overnight for best results.
Serve chilled and refrigerate any leftovers.
This recipe makes approximately 6 servings of creamy cucumber salad.
